I am gluten-free and have been for many years now, and I love it. But a couple weeks ago, I took a trip to my nearest gluten-free grocery store. They had, what, six different breads on the baking rack, all with different amounts of gluten. I wanted to try every single one. My first thought was, “How can you be gluten-free with no gluten in your diet? That isn’t gluten.” I was wrong. The secret to keeping your diet gluten free is that if you aren’t eating gluten, your body is just able to break it down and absorb it.

Gluten, however, isn’t a protein, it is a carbohydrate that your body can’t break down. So if you don’t eat gluten, your body will not be able to digest it.
